Cutting the Noodles

Drying the dough

We must let the pasta sheets dry for 5-15 minutes before we can begin cutting. Keep an eye on the time, though, as we don't want the sheets to dry out completely!

When done drying, take a pasta sheet and cut it in half. Send pasta sheet through KitchenAid cutter attachment.

Shaping the noodles

  1. Dust noodles with flour to prevent them from sticking. Don't be afraid to use a lot of flour!

  3. Coil the pasta around your hand to create a noodle "nest" or arrange the strands on a tray.

  5. Repeat cutting process for remaining pasta sheets.
